The Brussels sprouts



 







Brussels sprouts is a green vegetable that looks like a mini-cabbage and have a diameter of about 1 inch. Brussels sprouts grow in bunches of 20 - 40 on a stem.

Brussels sprouts is a nutritious vegetable that will fill you up, without filling you out.

Perfectly cooked Brussels sprouts have a crisp, dense texture, bright green color and slightly sweet taste.

  • Antioxidant
  • Protection against inflammatory disease (arthritis)
  • Vitamin A,  B6, C, K, thiamine, riboflavin 
  • Beta-carotene
  • Potassium
  • Iron
  • Magnesium
  • Folic acid
  • Fiber (aids in toxin/bowel elimination, forming a soft, bulky stool easy to pass)
  • High in protein (good meat substitute)
  • Sulforaphane (helps detoxify the body)
  • Low in saturated fat and cholesterol

My favorite Brussels sprouts dish is slice or whole, steamed, grilled, or baked, with a variety of spices, fresh garlic, with extra virgin olive oil on top of red or regular quinoa or black rice with steamed asparagus and roasted beets.
