Quinoa is naturally gluten free and an excellent food for vegetarians and vegans.
Quinoa is high in iron and calcium a good source of manganese, magnesium and copper as well as fiber.

Quinoa is eaten like a grain but is a seed and is related to spinach, chard and beets how it grows in hot temperatures.

In the winter months I eat it topped with lentils, roasted beets, steamed asparagus, and snap and snow peas, in the spring I eat it with steamed or grilled egg plant or squash, in the summer months I eat it on top of raw spinach with sweet mango slices topped with extra virgin olive oil.
